Apple-Cinnamon Cake: Smells Like Home

Did you know that apple-cinnamon is one of the most popular smells? Both cinnamon and apple-cinnamon regularly make top-10 lists. I certainly love them, and chances are you do too. If you want your home to smell delicious, and want a simple recipe too, try this gluten-free apple-cinnamon cake.


Ingredients

1 cup sugar

1 1/2 cups white rice flour

3 eggs

1 firm apple, finely chopped (I like tart apples and I use a mini-chopper)

Ground cinnamon

Raisins


Preheat the oven to 190C/ 375F.


Mix the sugar, rice flour and eggs together. Mix in about 2/3 of the the shredded apple until well blended. Add cinnamon to taste (I use about a Tablespoon here). Pour into a square greased or non-stick baking pan.


Sprinkle the rest of the apple and some raisins on top, and sprinkle a little more cinnamon over the top if you want to (I usually do). Cinnamon sugar on the top is also nice.

Bake for about 15-18 minutes, until the cake is set and the little bits of apple on the top are just starting to brown up.


Cool and treat yourself! This cake is great with coffee or tea, with a bit of ice cream, sorbet, or whipped cream, or just by itself. And it makes the house smell heavenly!
