Winter Pork Roast: Heartwarmingly Gluten Free

Cold winter days, long dark nights, busy weeks – whether it’s school, work, family, or all of the above, getting a tasty and nurturing gluten-free meal on the table can be tough. That’s why I love my slow cooker, and this easy “dump it in and walk away” roast pork recipe.

Start it in the morning and come home to a delicious dinner everyone can enjoy. Or if you eat dinner foods for breakfast, like I do, start it before bed and wake up to a meal that will get your day off to a delicious gluten-free start!


Ingredients


ingredients for the recipe: pork, sweet potatoes, carrots, parsnips, raisins, apple, orange juice and mustard

1 pork roast, frozen or defrosted. If it has a thick fat layer, consider trimming some of it off (optional)

2 medium sweet potatoes, cut into 1-inch chunks (I leave the skins on)

3 parsnips and 3 carrots, peeled and cut into 1-inch slices

1 apple cut into chunks (again, I leave the skins on)

Handful of raisins

¾ cup orange juice

2 Tablespoons spicy mustard (or more to taste)

 

 

Prepare all the vegetables and the apple and throw  them in the slow cooker. Put the pork on top, then toss in the raisins. Mix the orange juice and mustard together, then pour over the top. Cover the slow cooker, set on low and walk away. This will need at least 6 hours, or 8 if the roast is frozen. But you can let it cook even longer -all that happens is that the pork becomes “shreddable” instead of “sliceable.”


A delicious gluten-free dinner

Serve it with a salad or a green vegetable of your choice. I bring leftovers in a lunch pack for a complete gluten-free lunch that gives me plenty of energy to get through even the rainiest, snowiest, windiest day.
