Fruit-Boosted Brownies: You Need This Recipe


Fruit-boosted brownies taste great with coffee, tea, or milk

I can’t believe I haven’t shared this recipe with you yet! I love these brownies, and so does everyone who has ever tasted them. Chocolatey, moist, and with the zing of your favorite fruit, they are an Easy, Tasty Gluten Free classic. I like a blueberry or raspberry yoghurt best, but strawberry and cherry are also good – anything you like!


Fruit-Boosted Brownies

Ingredients

150 grams butter

1 c sugar

½ c cocoa powder

1 cup rice flour

½ cup sweet rice flour

2 eggs

1 tsp baking powder

½ tsp baking soda

One serving-sized cup of berry-flavored yogurt (about 4 ounces or 150 grams)


Preheat the oven to 350˚F/180˚C.


Melt the butter, then add the sugar and blend. Stir in the cocoa. Now add the flours, eggs, baking powder and baking soda, mixing well after each addition.


Add the yogurt last, a little at a time, so you can manage the texture. The batter should be loose enough to pour without being watery.


Pour the batter into a square silicone pan. Put the pan on a cookie sheet for support before placing it in the oven.


Bake for about 15-20 minutes, until a toothpick in the center comes out clean. Cool until room temperature before cutting and serving.
